We make Regular, and Jalapeņo & Cheese Summer Sausage. Our Summer Sausage is made from a custom blend of spices, precisely mixed, then smoked for 8-10 hours in the smokehouse. Our Summer Sausage is fully cooked, so you can cut off a slice and eat it right away. The Jalapeņo & Cheese Summer Sausage is our best seller - not too hot, but just enough kick, and with lots of fresh Wisconsin cheddar cheese and real jalapeņos. Your Summer Sausage will be vacuum sealed in convenient 1/2 stick packages - about 1 1/4 lbs - just the right size to keep the rest frozen for later.
